Are you a fan of pineapple? (check) Do you think that coconut water surely must have more sinful uses than to hydrate after exercise? (boring) Think gin separates the adults from the vodka drinkers out there? Wanna play James Bond and have a martini and not have to hide your “eww — yuck” face? (Yes) Wonder why rosemary can’t be used more often in things other than Italian food or to address your favourite aunt? (It can?) Here’s an amazing martini shared by Carlynn on her site JJ Begonia and when I discovered it a few weeks ago, I knew I would have to make it while summer remained. And I must say, she nailed it with her recipe which I’m very happy to share. Please do check out her incredibly beautiful blog which has some of the best food photography I’ve seen.
Pineapple Coconut water and Rosemary Martini
Given I was using my own Vitamix, the only change on the recipe I made is to freeze my fresh pineapple first. This was enough to seriously chill the martinis and make for pure pleasure and eliminate the need for a shaker. Just note that the pineapple froth shouldn’t be counted as a “part” when measuring out the pineapple mixture against the gin … or you’ll end up with a seriously strong martini. Fact is though, as much as this sounds like a fruity drink, it actually isn’t at all. It really tastes like a gin martini with a wonderful pineapple flavour … just enough to hide the alcohol but not the taste of the gin. The result is a serious grown-up drink that is best shared with 3 other good friends.
